The Sunway used to be the spotting hotel of choice before the vast new terminal and second runway opened at Shenzhen. It still maintains views across the airfield just everything is more distant now so spotting tech (e.g FR24, SBS box) needed. Located by the terminus of Line 1 of the Shenzhen Metro means the metro can be taken from the terminal. Alternatively a taxi or ride hailing app such as Didi or the Didi function within WeChat.
High floor - I don't have the room numbers but I used a photo of the hotel on a leaflet to gesticulate the rooms I wanted and the receptionist understood - and ten minutes later came to my room to move me to a better view! There's Chinese catering nearby, these days food apps would allow any food you like to be delivered.
